1/4 cup coconut oil

1/4 cup honey (optional)

1/2 cup almond butter

3 eggs

1 teaspoon vanilla

1 1/2 cups almond meal

2 tablespoons coconut flour

1/2 teaspoon baking soda

1/4 cup Enjoy Life chocolate chips

 

Preparation

Preheat oven to 350 degrees. Grease a mini muffin pan with coconut oil.

In a large bowl, melt together coconut oil and honey. Stir in almond butter, eggs, and vanilla.

In a small bowl, stir together almond meal, coconut flour, and baking soda. Pour dry ingredients into wet ingredients and stir until combined. Fold in the chocolate chips.

Scoop 1 tablespoon of batter into each mini muffin cup. Bake for 10-12 minutes. Makes 36
