• Rotisserie free range organic Chicken, shredded
  • 4 1/2 tbsp coconut flour
  • 1/2 c. plus 4 tbsp water
  • 3 eggs
  • 4 tbsp olive oil
  • lime juice to taste (optional)
  • 1/2 tsp. spices of your choice
  • 1/2 tsp baking powder

 

Preparation

Shred the rotisserie chicken and set aside. Heat a frying pan and grease with olive oil or coconut oil.

Use just enough to coat the pan.

Combine the dry ingredients in a bowl and whisk together the wet ingredients in another bowl.

Slowly pour the liquid into the bowl with the coconut flour mixture.

Use a whisk and stir while pouring the liquid in to prevent lumps. Whisk until smooth.

Pour 1/4 cup of the tortilla mix into the hot pan. Put some chicken onto the cooking tortilla and add some additional mix. Sprinkle some Trader Joe’s 21 Spice Salute or other spice/seasoning on the cooking tortilla.

Heat uncovered for 1 minute and then put a lid on the pan and heat an additional minute. Uncover the pan and flip the tortilla.

Cook an additional two minutes and remove from pan. Makes about 6 chicken tortillas.
