• 2 Full  free range organic Chicken Breasts
  • 2 Chipotle Peppers with sauce
  • ! 13.5 Fl. Oz. can of Organic Coconut Milk
  • 3 Golden Delicious Apples
  • 2 Tbsps butter
  • 1 Tbsp Olive Oil
  • 1 Tbsp Raw Honey
  • Sea Salt and Pepper to taste
  • Cinnamon (dash)

 

Preparation

Place butter (or Ghee) with Olive oil into large sauce pan on stove top; allow butter to melt.

Add Coconut milk with the Chipotle peppers and sauce to large sauce pan on stove on med. heat and mix for 5 minutes. Add in sliced apples and honey (or agave) towards the end of mixing.

(I will sometimes add additional spices like cayenne and garlic salt)

Place 2 butter-flied chicken breast in oven baking dish and pour apples and coconut milk/chipotle sauce over chicken breast

350 degrees for 35 minutes

I will take the sauce out of the oven pan after cooking and reduce it down on the stove to thicken it up.

Warning: this recipe has some spice-KICK to it!

Reducing sauce is optional, makes it creamier.

*note – the only dairy is the grass fed butter*
