1 Banana, mashed
2 Tbsp butter (or coconut oil), melted
1 Tbsp Honey (optional; the banana and dates add plenty of sweetness already)
1 Tsp Vanilla
1/4 Tsp Baking Powder
5-6 Dried Dates, chopped
Preheat oven to 400 degrees. Mix the wet ingredients together with the mashed banana.
Mix the coconut flour and baking powder together and then add to the wet ingredients and mix until combined.
Add in the chopped dates.
Scoop your batter into a muffin tin that is either greased or lined with cups.
You should get 6-8 muffins depending on how full your cups are.
