- 6 pasilla peppers
- whole roasted chicken
- cilantro
- sauteed onions
- 6 tomatillos
- 3 jalepenos
- salt/pepper
- 1 can green chiles
- 2 limes
- lettuce/tomatoe for garnish
Preparation
Roast & peel pasilla peppers. I bought an organic rotisserie chicken from Whole foods, shredded it…added lime juice, almost 1/2 cup cilantro & some of the chicken juice to the chicken. Then I sauteed 1/2 onion & added it to the mixture & stuffed the peppers.
The salsa I made I poured all over the top before baking. 375 for 40 mins.
- Tomatilla salsa.. 6 Tomatillos, husked, rinsed, and quartered
- 3 Jalapeno, quartered and seeded
- Large Handful Fresh Cilantro
- 3 Garlic Cloves
- 1 T. Sea Salt
- 1/2 T. Black Pepper
- 2+ Tbs. Fresh Lime Juice
- small can green chilies
Mixed it all in a food processor until chunky/blended.
Trader Joes also has a really good Salsa Verde that contains no preservatives/etc. I will try that next time on these.
