- 4 Granny Smith Apples
- 5 organic Eggs
- 1/4 c Flaxmeal
- 2 T Coconut Flour
- 1/4 c Shredded Coconut
- 1/4 t Salt
- 1 t Cinnamon
- 1/8 t Nutmeg
- 2 T Honey (optional)
- Coconut Oil, for frying
Preparation
Heat coconut oil over medium heat in a heavy-bottomed skillet. Don’t be afraid to be generous with the oil!
Add the batter by large spoonfuls to the oil. Fry for 2-3 minutes, then flip and cook for 2-3 more.
Watch them closely to make sure they don’t burn. Remove onto paper towels to drain off excess oil.
Serve piping hot with honey and/or almond butter!
