500g shelled mussels
1 can tomatoes
2 rashers of bacon diced
1 onion diced
3 garlic cloves diced
1 tbsp bacon grease
1/2 tsp chili flakes
1 tsp parsley
salt and pepper
Preparation
Melt bacon grease over a medium to high heat and add onion and garlic.
Cook until almost transparent and then add bacon, cook for a further 2 minutes whilst stirring.
Add herbs, chili, salt and pepper, and can of tomatoes. Cook whilst stirring for about 5 minutes.
Add mussels and keep stirring until mussels appear cooked (about 2-4 minutes).
Serve with plain cabbage mash.
