• 8 Chicken Thighs (or chix breast)
  • Unsweetened Coconut Flakes
  • Coconut Flour
  • Egg wash (scrambled eggs)
  • Paprika
  • Salt & Pepper
  • Extra Virgin Olive Oil

Preparation

In a bowl add the coconut flour, Salt & Pepper, & Paprika. Mix together ingredients with hands.

Sprinkle the coconut flakes on a plate.

in a bowl whisk together eggs to make an egg wash.

Heat up a pan over low-medium heat with Extra Virgin Olive Oil.

Dip chicken in egg wash, dip chicken in coconut flour mix, roll chicken in the coconut flakes. Put chicken in heated pan with the EVOO.

Cook for 10 min per side, until cooked all the way through or golden brown.

This was very sweet for me. Next time I think I will add some curry powder or maybe some cayenne pepper. I like my food spicy
