- Olive oil, Italian herb seasonings, Chipotle seasonings
- 2 pounds total of sliced onion, zucchini, eggplant, musrooms, tomatoes, bell peppers
- 1lb Organic chicken sausage, or any sausage you have on hand
- 1/2 cup Fresh basil
Preparation
Drizzle olive oil on sliced veggies, sprinkle with seasonings. Preheat a clean grill to medium-high, and then lay out veggies and sausage with some space between. After 3-4 minutes, flip over. If there are no deep grill marks, they will need to flip again after 3-4 minutes. Vegetables and sausage should be dark golden brown on both sides. Remove veggies and sausage. Chop everything into bite size pieces and add to a large saucepan. Cook on medium-low for 7-8 minutes, stirring frequently. The tomatoes should be smashed and mixed through out. Sprinkle some extra seasonings and fresh basil. Eat as is, or scoop on top of zucchini noodles.
