- 1lb lean organic ground pork
- 1 medium onion medium dice
- 1 bag of mixed veggies {You pick what makes you happy mine had Carrots, Broccoli, and Cauliflower}
- 4 Sausages, chopped up
- 1 Can Diced Tomatoes {or use fresh!}
- Cumin, Red Pepper Flakes, Chili powder, Oregano, Thyme, Salt + Pepper
- Kerry Gold Butter {lots of it!}
- Scallions chopped
- Apple Cider Vinegar
- Extra Virgin Olive Oil
Preparation
Get some butter melty melty in a pan and toss in your onions.
Once your onions have started to sweat a little toss in your sausages and veggies let them start to cook. The broccoli and the cauliflower always come to big so I pull them out and cut them into pieces. Add in some more butter {trust me on this one}
After a few minutes add your ground pork and let it become friends with the rest of the awesomeness in your pan.
Toss in some more butter {a spoonful or so}
Add in a decent amount of cumin, a couple sprinkles of chili powder, about a 1.5 tsps of Oregano and Thyme. As much red pepper flakes as you want salt and pepper. And then add in your vinegar {I’d do at least a tbsp}
When your meat is almost totally done add in the tomatoes, let it all finish cooking. While it finishes up chop up your scallions.
Add in some more butter, taste test it and adjust as needed.
Dish up, sprinkle on some scallions, drizzle a bit of oil on top and dust with a smidge bit more cumin. Viola it’s done!
