1 grass fed Pound Ground Beef
1 Pound Ground Pork
1 Pound Ground Lamb
4 slices thick cut bacon
1 large onion
2 large carrots, 2 big stalks of celery
2 bulbs of garlic (yes, that means two ENTIRE bulbs of garlic, not cloves!)
2 eggs
1/4 c almond flour (maybe more)
Seasoning: 1 TBSP paprika, 1 tsp salt, 2 tsp black pepper, 1 TBSP lemon pepper seasoning
Preparation
So we get lots of our 100% grass-fed/pastured meats in 1lb ground packs because they’re pretty cost effective.
This recipe is great to use up any ground meat you have in the freezer.
As long as you keep the quantities the same, any meat combo will work!
Preheat over to 350. Finely chop onions, celery, and carrots. Finely mince garlic.
Combine veggies in a large mixing bowl with ground meats and mix to combine – you should use your hands or a spoon. Using appliances will generally change the texture of the meat.
Rough chop bacon into bite-size pieces. Add in eggs, bacon, and seasonings, and again mix to incorporate.
Begin adding almond flour until everything sticks together in a big ball.
Evenly spread mixture into a round cake pan, and cook for 55 minutes.
Remove from oven, and let cool for 10 minutes.
