2 lbs Large Prawns
2 Tbsp Minced Garlic
1/2 of a Lime
1/4 Cup of Shredded Dried Coconut (NOT SWEETENED)
Pepper to taste
Preparation
Used a 2lb bag of Wild Caught Frozen Prawns from Sam’s Club – so they needed a quick trip in the microwave to speed things up (approx 4 mins for the 2lbs).
In the meantime, add the Butter and Garlic to skillet – go to med heat, once you’ve peeled the Prawns add them to the mixture.
Once you see them all turn Pink, reduce the heat and sprinkle on the Dried Coconut. Top off w/ a squeeze of 1/4 of the Lime.
Use your spatula to stir gently. Once they are done, turn OFF the heat and let sit on the burner for a few mins or off the burner.
This should “set” the coconut flakes into the glaze from the Garlic and Butter.
Squeeze the other 1/4 slice of Lime if you like, add Pepper whenever you feel like it – if you even want it
And as always, use more or less of everything as you see fit
