2 lb grass fed GF ground beef
1 hot pepper (I used a red chili pepper)
salt, onion flakes & smoked seasonings to taste
3 scallions (or 1/2 an onion if that’s what u have in the house)
3 teaspoons crushed garlic
a few handfuls of spinach or kale
2 zucchini, shredded
2 Heads of Cauliflower – steamed
1 package turkey bacon
several Tablespoons of organic Butter
Preparation
Melt some butter in a pan and put your beef in…Add your spices & brown the beef.
As beef starts to cook, chop or put hot pepper in a food processor…add chopped pepper and garlic about halfway through.
Add scallions close to the end. *Note-if using onions, add them once you start to get the beef broken up into little pieces.
While beef is cooking chop cauliflower and steam until soft.
By the time you’re done chopping your cauliflower, your beef mixture may be about done.
If this is the case, put your beef into the bottom of a casserole dish & preheat oven to 350 degrees
Meanwhile, put spinach or kale into food processor to chop into small pieces. Spread evenly over the beef in the casserole dish.
Shred zucchini and put in the pan with some butter.
Add salt and pepper. Cook for a few minutes until hot. Add to casserole on top of your spinach, spreading evenly.
Dump the water from the pan, add some more butter to the pan and put your turkey bacon in the food processor to chop. Add chopped bacon to pan and lightly brown.
By this time, your cauliflower should be steamed.
Put it in a bowl with several pieces of butter & salt to taste.
Use a potato masher to mash it until the butter is melted.
Then add the mixture to the food processor, add some more butter and put it on high until it is the consistency of whipped potatoes.
Put your whipped cauliflower back in the bowl, add chopped bacon and mix until bacon is dispersed throughout cauliflower.
Spread mixture on top of the zucchini in the casserole.
Bake at 350 for 20 minutes
