2 TBS almond flour

2 TBS coconut flour

1.5-2 tsp. Matcha powder (I use Teavanna brand)

2.5 TBS walnut oil

2 TBS raw honey

2 TBS canned coconut milk

1 egg 

splash of vanilla extract

 

Preparation

Mix all ingredients in a bowl or deep coffee mug.

Pop into the microwave for 3 minutes.

Let cool for a few minutes, split in half if sharing with another person or consume right out of the bowl if you’re feeling indulgent.

You can easily adjust the taste and moisture content of this cake by adjusting the amount of matcha powder and walnut oil.

Or, if you’re in a chocolate mood, switch out the matcha entirely with 2tbs of unsweetened raw cacao powder.
