1 bag organic fresh mixed vegetables
1 jar organic low-sugar tomato sauce or plain crushed tomatoes seasoned with herbs, sea salt, and pepper.
1.5 lbs grass fed ground beef
1/2 onion (diced)
2 tbsp lard, organic butter or coconut oil
Preparation
Over medium heat, melt oil in a large saute pan.
Add onions and garlic, sauteeing for 2-3 minutes.
Add ground beef and stir, breaking up the meat and cooking it evenly.
Add sauce, turning heat to low and allowing the mixture to simmer.
While the sauce cooks, add a small quantity of water to another saute pan (~1/4 cup).
Bring the heat to medium-high and when the water starts to boil, add frozen vegetables.
Cover with a lid and allow vegetables to steam for ~5-10 minutes or completely defrosted and the vegetables are heated through. Drain off any excess water.
Plate 1/3 of the vegetables and top with meat sauce. Top with fresh grated Parmesan or Romano cheese if desired.
