2 1/4 cups almond meal/flour

4 eggs

1 organic apple finely chopped

1 overly ripe banana

1/4 cup coconut oil

1/3 cup water

1/2 tsp baking soda 

1 tbsp cinnamon

¼ cup dark chocolate chips (70% cocoa

 

Preparation

Pre-heat oven to 350. Mash the banana in the bottom of a large mixing bowl.

Using a hand chopper or food processor, finely chop the apple, and add to the bowl.

Add all other ingredients and mix by hand. The batter should be consistency of a cake batter.

Grease a cake pan with coconut oil. Bake for 15-17 minutes or until the sides become slightly brown.

Insert a toothpick into the middle and if it comes out clean you’ll know it’s done.

Enjoy with homemade paleo ice cream or for breakfast.
