- Ripe (or Overripe) Nectarines (2)
- Ginger Powder
- Red Onion
- Sea Salt
2 overripe nectarines (you know, the ones that your significant other has deemed “uneatable” b/c they are a little soft!)
Slice to 1/2 inch pieces, sprinkle w/ cinnamon, ginger, sea salt, pepper and add about 1 tbspn of finely chopped onion.
Add to oven for approx 30mins, until it’s mushy and juicy. Use as condiment for Chicken or Fish. If you want mire of a Dessert – take out the onion.
I was trying to emulate the Mango salsa they serve w/ seafood at Bonefish Grill, but I didn’t have any Mango’s. Ergo, Nectarine’s to the rescue!
