free range organic chicken breasts

4 rashers of bacon chopped

2 large field mushrooms chopped

1 onion chopped

2 garlic cloves chopped

2 tbsp ghee

3 tbsp double cream

1 tsp dried chopped sage

1 tsp dried chopped italian herbs

Salt and pepper



Melt ghee in a pan, add onion and garlic and cook until translucent.

Add bacon and mushroom to the pan and cook for 2 minutes. Add herbs and salt and pepper.

Push the mixture to the sides of the pan and add the chicken breasts to the pan, and cover with the carbonara mixture. Cook for 5minutes with the lid on a low heat.

Turn the chicken breasts over and cover with the carbonara mix and cook for a further 5minutes on low heat.

Serve chicken breasts on plates, add double cream to carbonara mix and stir through. Serve carbonara mix on top of the chicken breasts.

Serve with steamed vegetables.
