- 2 free range organicĀ chicken breast (sliced)
- 1 Green Bell Pepper (sliced)
- 1/2 Jalapeno (minced)
- 1 C Almonds (chopped)
- 1/2 Scallions (sliced)
- 1/2 C of Celery (minced)
- 3 tbsp of Mayo
- Salt & Pepper to taste
Preparation
Add chicken breast to boiling water. Reduce heat & simmer for 20 minutes.
While chicken is cooking prep all your veggies (jalapeno, bell peppers, scallions, celery, almonds) & add these to a bowl.
Remove chicken from boiling water & let sit until it cools down. Cut chicken in to slices & add to veggie mix. Add mayo & Salt & pepper.
Refrigerate & chill until ready to serve!
