1 C Olive Oil

2 lemons squeezed (juice only)

1/3 C of each: Parsley, Basil, Thyme, & Oregano

2 cloves of Garlic

1 whole Shallot

1 Yellow Pepper, 1 Orange pepper

1 large Yellow Onion

Button Mushrooms

Favorite Steak

12 Large Jumbo Shrimp (raw)

 

Preparation

Chimichurri Sauce:

Combine olive oil, lemon juice, parsley, basil, thyme, oregano, garlic, shallots & salt & pepper to taste. Let sauce sit for 1 hour.

Shrimp Kabobs:

(soak skewers for 30 minutes in water to prevent burning)

Quarter onions & peppers. Add onion, peppers, mushrooms & shrimp to skewers. Alternate as desired until skewer are filled.

After marinade has sit for 1 hour add marinade to steaks & shrimp kabobs. Let steak & shrimp marinate for an additional hour.

Over medium heat on the grill add steaks. Cook 4 minutes on each side (only turning once).

Add shrimp kabobs to grill. Cook until shrimp has turned pink (about 2-3 minutes).

Total cook time for steaks: 8 minutes

Total cook time for shrimp: 3 minutes
