Preparation

This is a special recipe that uses a clay pot for roasting the chicken.

If you don’t have one, a standard dutch oven will also work well.

Depending on the pot you use, cooking times may vary. Chicken is done when leg juices run clear.

Chop and combine ingredients for stuffing, in any quantity you choose:

-apples, red onion, rosemary, almonds

Peel beets and wash spring onions, put these on the bottom of the pre-soaked claypot.

Stuff chicken with the stuffing, and rub oil, pepper and minced garlic over chicken.

Put in (non-preheated) oven

Bake in oven for ca. 1 – 1 1/2 hrs at 450.
