• 1 pound of skinless boneless organic chicken thighs
  • 1 large yellow onion
  • 2 cloves of garlic
  • 3 tablespoons of ground tumeric
  • 1 lemon
  • handful of cherry tomatoes tossed in olive oil and salt
  • handful of chopped green onion or parsley
  • 2 tablespoons olive oil

Preparation

Lightly coat a cast iron skillet with olive oil and bring heat to medium high

Add one large chopped onion and sautee for 5 min

Add chicken and cook for additional 10 min

Add tumeric, diced garlic, and squeeze half of one lemon

Stir occasionally and cook for another 15min according to desired browning of chicken (be sure that the chicken is making contact with the bottom of skillet for proper browning)

Remove the skillet from stove add cherry tomatoes and remaining lemon

Place skillet inside an oven that is set on high broil

Watch (and listen) for the cherry tomatoes to pop

Before the 2nd to last tomato has popped, remove from oven and garnish with chopped green onion or parsley

Add salt and pepper and ENJOY, then tell your friends you are an awesome cook
