12 eggs

2 cups almond milk

1/3 cup coconut oil, melted

1 tablespoon vanilla

1 tablespoon maple syrup

1/2 cup coconut flour

1 teaspoon baking soda; 1/8 tsp nutmeg

2 apples + 1 pear, sliced 1/8″ thick

1/4 cup coconut oil; 1/4 cup maple syrup

1 tsp cinnamon; 1 tsp nutmeg

 

Preparation

Preheat oven to 425 degrees.

In a large bowl, whisk eggs, almond milk, 1/3 cup coconut oil, vanilla, and 1 tablespoon maple syrup.

In a small bowl, stir coconut flour, 1/8 teaspoon nutmeg, and baking soda. Mix dry ingredients into wet ingredients and beat well to combine. Set aside while you prepare the apples and pears.

In a small frying pan, heat 1/4 cup of coconut oil with 1/4 cup maple syrup. Stir in cinnamon and nutmeg; cook for 1 minute. Pour the mixture into a 9×13″ baking pan.

Spread apple and pear slices into an even layer in the baking pan. Carefully pour the egg mixture over the apples/pears.

Bake for 20 minutes in preheated oven.

Reduce heat to 375 degrees and continue to cook for 20-25 minutes.
