olive oil

1 garlic clove , thinly sliced

1 small red onion , thinly sliced

2 tbsp red wine vinegar

½ lemon , zested

1 tbsp honey

2 wild salmon fillets

a small handful of mint leaves

 

Preparation

Heat 1 tbsp olive oil in a small frying pan, add the garlic and onion and cook for 5-10 minutes until golden and caramelized.

Remove from heat, add vinegar, zest, honey and seasoning and whisk until syrupy.

Return to heat and cook for a few minutes until the onion is sticky.

Grill or fry the salmon for 3 minutes each side.

Spoon over the onions and scatter mint leaves over. Serve with salad.
