1 lb. grass fedĀ  beef for stir fry slices

Coconut Oil

Coconut Water

Can Coconut Milk

1 head broccoli

3 Sweet mini peppers

1/4 onion

Curry Powder

1 handful raw spinach

Coconut flakes (optional)

 

Preparation

Heated a skillet on Med./High heat. I threw in 1 TBS. coconut oil and a splash or two of coconut water.

I threw in the beef and cooked it through. I then removed the beef and set aside on a plate.

Next I added the broccoli, onion and peppers.

I added 1 cup of coconut milk and 1 TBS. of powdered curry. I put a lid on it and reduced heat to med./low and let it simmer about 10 min. (or until veggies are soft).

I added the beef back into the stirfry and threw in a handful of spinach. stirred it all together and when the spinach wilted a little I turned off the stove and dished it out into 2 bowls.

Sprinkled a little unsweetened coconut flakes on top and VOILA
