2 lbs grass fed of Skirt Steak (1 inch thick)
1/4 C of Fish Sauce
1 & 1/2 Limes (squeezed)
1 Garlic Clove & 2 cloves of Shallots (minced)
1 Jalapeno (minced)
1 Red Onion (diced)
1 Whole Red Butter Lettuce (chopped)
1/2 C of Cilantro (chopped)
1 Cucumber (peeled & diced)
Preheat broiler or grill:
Sprinkle the steak with salt & pepper, then grill for 4 minutes per side or until medium-rare.
Let steak sit for 10 minutes before cutting into strips.
Whisk together fish sauce, lime juice, garlic, shallots, jalapeno, & pepper.
When steak is done add to dressing & let sit for a few minutes.
Add lettuce, cucumbers, mint, cilantro & onion to plate.
Top it with beef & drizzle some dressing on top.
This is one of my favorite dishes at a local Thai restaurant.
