2 eggs

3/4 cup coconut desiccated

1/4 cup almond meal

1/4 cup coconut cream

Ghee for pan

(Maple syrup and double cream to serve)

Preparation

Whisk eggs and coconut milk.

Add almond meal and coconut and stir.

Melt some ghee in a pan and start cooking. Be sure to add more ghee everytime you add more pancake mix.

Serve with maple syrup and double cream!
