8 oz or more Grass fed steak of your choice

1/4 red onion

1 med carrot

2 -3 cups Brussels sprouts

4 strips nitrite free bacon

Preparation

Cleave the stumps off your sprouts and cut them into halves or quarters, steam for about 5-8 minutes.

Remove from heat and reserve the water.

Dice your onion, carrot and bacon and add to your pan.

Cook with the lid on until onions are soft then remove the lid to slowly get the bacon/onion crispy for a few minutes and add the steamed sprouts.

Mix for a few minutes and throw in your steak! I cook on med or just below and it takes about 10 minutes to get the steak to med-rare.

It will depend on the thickness of your steak and the power of your stove, but don’t be afraid to cut into the steak to see how it’s doing.

When the steak gets to the desired level of doneness, remove it from the heat and let it rest on the pan.

Increase the cooking temp slightly to begin to caramelize the onions.

Deglaze with saved sprout water and reduce.

This really doesn’t take that long as we don’t recommend burning your dinner to a crips.

We split one 8 oz steak between the two of us, but use a large pan and you can probably get 2-3 decent sized steaks in. If your family is large, split the bacon/onion/carrot mixture.

Cook half in a pan with just the steaks and the other half with the full sprout mixture.
