1 red pepper

1 yellow pepper

10 shiitake mushrooms

Half a white onion

3 cloves garlic

A few chivesĀ 

A few jalapenos

Cumin seeds

Salt & Pepper

 

Preparation

Slice the red and yellow peppers, mushrooms and onions into 1/4 inch strips

Dice the garlic, chives and jalapenos finely, adjust the amount of jalapenos to your taste, maybe one if you like less spicy, a few more if you like more spicy

Start a large pan with olive oil and get it near smoking hot

Add peppers, mushrooms, onions and cumin seeds to pan, cook a couple minutes until vegetables are brown to black on the outside, then turn heat to medium-low

Add the garlic and jalapenos, and add salt and pepper to taste, cook for a couple more minutes until the vegetables are al dente

When the vegetables are cooked, turn off the heat and mix in chives, saving some for garnish

Enjoy warm or refrigerate to enjoy cold, or both!
