One ripe pear (one makes enough for two people)

The juice of one lemon

One egg white (whisked into soft peaks)

One table spoon of gluten free cacao powder

50g of almond flour/meal

Two ramekins

 

Preparation

Chop the pear up and add with the lemon juice in a small pan and simmer until they are soft.

For the topping, whisk the egg white until you have soft peaks and fold in the cacao and almond meal.

Stick the pear and its juices into two ramekins then add, level and smooth the topping (use a wet spoon to make it easier for you).

Stick them in the oven for 20 minutes or until the top is nice and hard. If you’re hard core like Nom Nom Paleo you could finish them off with a blow torch but I’m not allowed power tools anymore according to my ASBO.
