- 3 Plantains (green bananas)
- 1 tbsp butter
- 1/4 cup coconut oil
- 2oz Baker’s unsweetened chocolate
Preparation
Fried Green Bananas
Melt butter in a large frying pan and add sliced plantains. Cook until plantains are soft and nicely browned.
Double, Bubble, Toil and Trouble
If you have a double boiler, great. If not, put a Pyrex measuring cup into a small pot and fill with water so that the measuring cup is 1/2 submerged.
Turn the heat to medium and add coconut oil and chopped up chocolate to the measuring cup.
Dunk, Dunk, Dunk
Once the chocolate and coconut oil have melted, dunk your plantains into the mixture (only 2 or three at a time), and place the dunked plantains onto a baking sheet covered in wax paper.
Put the plantains in the fridge for ~5 minutes. Then, dunk them again.
Repeat this process until all the chocolate is used up.
Put the plantains into the fridge one more time to harden completely.
