• 1 lb pork chops – 4 boneless pieces
  • 9 oz bag baby spinach
  • 1 fresh pineapple – Cored and cut into 1 inch chunks
  • 1 quart fresh blueberries
  • 1 lemon
  • Olive oil
  • Salt and pepper


In a saute pan over medium heat, add a couple tablespoons of olive oil. Add pork pieces (salted and pepper to taste) and cook for 3-4 minutes per side or until cooked through.

While pork is cooking, heat a separate grill pan over medium heat and add pineapple pieces. Cook for 2-3 minutes per side or until starting to get a little golden brown. Remove and set aside.

After pork is cooked allow to rest for 3-5 minutes and then cut into 1/2 inch strips.
