Combine cinnamon, cloves and ginger into bowl and mix till combined. Drizzle olive oil over pork and then sprinkle with salt on both sides.
Rub cinnamon/ginger/clove mixture all over pork and put in refrigerator for 1/2 hour to 2 hours.
Remove and allow to sit at room temp for a few minutes.
Heat oven to 425 F degrees.
In an oven safe pan (I use grill pan) add a little olive oil and sear pork on both sides for 2-4 minutes on each side. You want a sear.
Place entire pan (or put pork on baking dish) into oven and bake until internal temperature is 170 F degrees. For thick cuts this can take 15-18 minutes.
