• 2 lbs of ground chicken
  • 4oz can of Red Curry Paste
  • Ground Cumin (sprinkle)
  • 1 tsp Fresh cracked Pepper
  • 2 tbsp of EVOO
  • 1 head of Romaine Lettuce
  • 3 tbsp of Scallions (chopped)
  • 1 Shallot (minced)
  • 1 Yellow Bell Pepper
  • 2 Romano Tomatoes

 

Preparation

Over medium heat, heat skillet with EVOO. Add grown chicken, sprinkle some cumin, black pepper, & shallots. When chicken in half-way cooked add the Red Curry Paste.

While the chicken mixture is cooking. Cut your lettuce, Scallions, Tomatoes & Yellow Peppers. Plate the lettuce, peppers & tomatoes. (save the scallions until the end).

When chicken mixture is cooked all the way through (about 8-10 minutes) spoon some of the chicken mixture on top of the lettuce. Sprinkle some scallions on top of meat & you are good to go!
