1 pound fresh scallops
3 slices of turkey bacon
2 large shallots, chopped
2 large garlic cloves, chopped
small dash of extra virgin olive oil
olive oil cooking spray
Preparation
Spray skillet with olive oil cooking spray and cook turkey bacon in skillet on med-high heat until done.
Remove and set aside. Splash the pan with extra virgin olive oil and sear the scallops on high heat until browned on all sides (about 4 minutes per side).
Remove and set aside covered with aluminum foil to keep them warm.
Place garlic and shallots in skillet and sauté on med-high heat until slightly browned.
Add spinach and cook until spinach is wilted (about 3-5 minutes).
Place spinach mixture on plate, add the scallops and sprinkle with crumbled turkey bacon.
