1 tbsp garam masala or other Indian spice blend
2 salmon fillets
100g Puy lentils
½ small red onion , sliced
½ lemon , juiced, half wedges
small bunch coriander , chopped
Mix the spices with a little oil, rub all over the salmon and leave for 15 minutes.
Meanwhile, simmer the lentils until tender, about 20 minutes.
Drain, then toss with the onion, lemon, garlic and 1 tbsp olive oil while still hot.
Grill the salmon fillets for about 8 minutes until cooked through.
Stir the coriander through the lentils and serve with the salmon.
