1 & 1/2 C of peeled diced Papaya

1/3 C thinly sliced green onions

1/4 C finely chopped celery

1 Finely chopped Jalapeno

1 pound of lump crab meat

3 tbsp of EVOO

2 tbsp of Cider Vinegar

1 tsp of Dijon Mustard

Pepper & Salt to taste

Preparation

In a large bowl add: papaya, green onion, celery, jalapeno & lump crab meat.

Fold ingredients together. In a separate bowl add: EVOO, Vinegar, Dijon mustard & Salt & Pepper.

Whisk ingredients together. Drizzle liquid mixture over crab meat mixture. Fold all ingredients together.

Chill. Serve alone, over lettuce, make a lettuce wrap or serve with cucumber slices…ENJOY!
