3 large cooked sweet potato
1 tablespoon coconut oil
1 teaspoon cinnamon
1 teaspoon mixed spice
1 teaspoon baking soda
Heat oven to 200 degrees and grease a dish with butter
In a bowl add the hot sweet potato/kumara, banana and oil and whiz up with stick blender.
Add in all other ingredients and stir. Depending on the size of the kumara you may need to add more coconut flour and only 2 bananas. The mixture should be quite thick.
Pour the mixture into dish and pop in oven. The cake mixture took 15 minutes to get golden on top. Insert a skewer and it should come out clean.
Once it cools down it becomes much firmer. I think mine could of been cooked a little longer. However it still tastes amazing! So just play around with the ingredients and see how you go.
