4 cups sweet potato, cubed

1/2 cup raw Honey

2 eggs, beaten

1/2 teaspoon sea salt

4 tablespoons coconuts butter

1/2 cup coconut or Almond Milk

1/2 cup maple syrup

1/3 cup brown rice flour

1/2 cup chopped pecans

*Casava may also used if you want.


Sweet Potato Casserole



  1. First, preheat the oven to 165 degree Celsius or 325 degrees F. In a medium saucepan, put the sweet potato with water and cover. Let it cook until tender over medium high heat, drain and mash the sweet potato.
  2. Mix the mashed sweet potato, eggs, raw honey, salt, maple syrup and almond milk in a large bowl. Mix until smooth, before transferring to a baking dish size 9×13 inch.
  3.  In a medium bowl, mix the brown rice flour and maple syrup. Add the coconut butter until you see the mixture is coarse and then stir in the pecans. Once done, sprinkle it over the finish sweet potato mixture.
  4. Bake the sweet potato mixture for at least 30 minutes, or until the top has turned slightly brown.
