Two medium sized sweet potatoes

Two pounds ground beef

1 carrot diced

1 piece of celery diced

couple mushrooms diced

1 tablespoon Dijon mustard

1 egg

1 teaspoon paprika  

2 tablespoons tomato paste

1 teaspoon onion powder

 

Preparation

Set oven to 400•. Peel and cut up sweet potato and steam until soft.

Meanwhile cut up your veggies and add to a bowl with your meat and spices.

Mash up the potato and allow to cool for a few minutes since you will be mixing with your hands.

Mix everything in a large bowl and form into meatballs.

Place into a baking dish.

Cook for around 30 mins. depending on the size of the meatball.
